Amongst the ingredients here is the new tea, Dipped Dew, delivered from Qiaoying Village right to the Teahouse, which was then quickly fried together with freshly-caught river shrimp. The look is sightly, the scent of distant tea, and the taste both tender and springy... Wait a moment. Why's she coming over with that plate of chilli?
Ingredients
Yield: 2 Servings
Shrimp
1 LB Whole Shrimp
2 Tsp Salt
1 Tbsp Flour
2 Tbsp Corn starch
2 Tbsp Oil
1 Tbsp Dragon Well Tea leaves (can have more)
Enough Frying Oil
Green Tea Sauce
1 Serving Dragon Well Tea
½ Tsp Salt
1 Tsp Sugar
½ Tsp Corn Starch
½ Tsp Water
Garnish:
3 Oz Dried Chinese Chilies
1 Oz Whole Garlic Cloves
Instructions
Shell and devein shrimp then add salt, flour, cornstarch and oil. Mix everything together till it is somewhat batter coating the shrimp. Add the Dragon well tea and then carefully incorporate the tea in the batter.
Add fry oil in a pot or wok and heat till it is around 375F. While the oil is heating up, prepare
the tea.
Once the fry oil hits the correct temperature, fry the shrimp for 1-2 minutes depending on the size of the shrimp. It should cook very quickly either way. Take shrimp out of the oil onto a wared rack.
Fry the leftover green tea leaves as well. Fry the garlic as well the chilies. The chilies should be done in 30 seconds. The garlic should take about 3-4 minutes.
Mix together cornstarch and water to make a slurry. In a pan simmer the green tea. Add in salt and sugar ( to taste). Once the mixture is simmering add slurry and then quickly mix everything together to thicken. Add in shrimp and coat in the green tea sauce.
Once coated, serve on a plate and garnish with fried garlic and tea leaves. Optionally serve with chilies.
